Besan Laddoo

 Besan Laddoo

 

 

 Ingredients

  • Besan (chick-pea flour) 3cups
  •  Ghee 1 cup
  •  Sugar (powdered)  1 1/2 cup
  •  Cardamon powder 1/2 tsp
  •  Almond 3 tbsp(sliced)


 Method


Heat ghee in a deep frying pan, add the besan, mix well and cook over medium heat for 20 minutes and add cardamom powder.Again cook until the besan change color and give pleasant aroma and remove the flame.

Transfer mixture to a plate and let cool completely, Its time to add sweetness to the ladoo adding powdered sugar and add the sliced almonds.
Mix sugar and mix besan well. Then take some of the mixture in your palm and shape it into a round laddoo.

Repeat the process on the rest of the mixture and prepare ladoos.


store in an airtight container when completely cooled.

 

Basundi

 Basundi 

 




 Ingredients

  • Milk - 1ltr
  • Sugar - 1/2 cup
  • Saffron - few threads
  • Cardamom powder- 1ts
  • Cashews-few
  • Almonds-few(chopped)
  • Pista- few(chopped)
 Method


Boil the milk in a  thick bottom  kadai and cook over low heat until the  milk is reduced by half and stirring constantly.

Take 1tablespoon milk add the saffron threads.keep them aside.
Add sugar, saffron and cook for 25 minutes or until  milk thickened, stirring constantly.


Add the cardamom powder and chopped almonds, cashews, pistachios and cook for 20 minutes and remove the flame.


Transfer into a bowl, Serve hot or cold.

Motichoor Laddoo

Motichoor Laddoo




Ingredients


  • Gram flour (besan) 2 1/2cup
  • Sugar 1 1/2cup
  • Water as per as required
  • Saffron- few strands
  • Ghee or Oil  for deep fry
  • Cardamom seeds 1 tbsp
  • Almonds 1tbsp
  • Pistachios 1tbsp



Method

Take sugar,saffron threads and three cups of water to make syrup of one thread consistency, then switch off the flame  and keep the syrup aside.Make a thin batter of besan with three cups of water. 

In a pan heat ghee or oil, take a large spoon of the besan batter and pour it on perforated ladle/spoon. press with the other spoon so that the batter falls down from the perforations into the hot oil.fry the boondi  till they become golden. don't over fry or make them crisp.

Remove the boondis using a slotted spoon, drain thoroughly and put into the syrup. When the boondis have absorbed all the syrup add cardamom seeds and mix gently.

Divide into equal portions and shape each into a laddoo.

Garnish with pistachios or almonds. Cool and store.
